BBQ Minty Garlic Lamb
This British main course delivers vibrant flavour in just 20 minutes. Lamb leg steaks are coated in a simple marinade of fresh mint, chopped garlic and balsamic vinegar. After a brief marinating time, the lamb cooks quickly on the barbecue or under a grill. The result is tender, aromatic lamb that pairs wonderfully with a simple tomato salad and warm pitta breads for a complete meal.
Ingredients
- 2 tbsp olive oil
- 2 garlic cloves finely chopped
- 1 tbsp balsamic vinegar
- 20g pack mint leaves only, chopped
- 4 lamb leg steaks
Method
- 1. Combine the olive oil, chopped garlic, balsamic vinegar and chopped mint by whisking them together. Season the mixture according to your preference and transfer it to a dish that is not metallic. 2. Place the lamb leg steaks into the dish, turning them to ensure they are fully coated in the marinade. Cover the dish and allow the lamb to marinate for 10 minutes, or for up to 1 hr if time allows. 3. Take the lamb steaks out of the marinade and arrange them on your barbecue. Cook the lamb for 3-4 mins on one side, then turn and cook for another 3-4 mins on the other side, or until they are just cooked through. 4. Serve the cooked lamb steaks accompanied by a fresh tomato salad and some warm pitta breads.
