BBQ Grilled Chicken Kebabs

These healthy chicken kebabs feature a flavourful marinade of soy sauce, lemon juice and honey with garlic and ginger. Boneless chicken pieces are combined with green peppers, onions and mushrooms, then threaded onto skewers. After marinating for 2 hours, they are grilled over coals for 15 to 20 minutes, basted frequently. This recipe yields six servings and takes 150 minutes from start to finish.

BBQ Grilled Chicken Kebabs

Ingredients

  • 90 ml water
  • 45 ml soy sauce
  • 45 ml lemon juice
  • 1 1/2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 6 boneless skinless chicken breast halves, cut into 4 cm pcs.
  • 1 1/2 green bell peppers, seeded and cut into 4 cm pcs.
  • 1 1/2 medium onions, peeled,washed and quartered
  • 12 large mushroom caps

Method

  1. Mix the water, soy sauce, lemon juice, honey, garlic powder and ground ginger in a glass baking dish.
  2. Place the chicken pieces into the dish.
  3. Stir everything together until the chicken is fully coated.
  4. Put a cover over the dish.
  5. Allow the chicken to marinate in the refrigerator for a minimum of 2 hours.
  6. While the chicken marinates, get your barbecue grill ready.
  7. Take the chicken pieces out.
  8. Drain them from the marinade liquid.
  9. Pour the used marinade into a saucepan and let it boil for 10 minutes.
  10. Thread the chicken pieces.
  11. Onto skewers, alternating with the prepared vegetables.
  12. Cook the skewers 15 cm from medium-hot coals for 15-20 minutes, turning and brushing with the boiled marinade regularly until cooked through.
  13. Present the kebabs while they are still warm.
  14. Tuck in and enjoy your meal.
