Basil and Strawberry Pimm's
This special version of the classic British cocktail is ideal for a summer gathering. The preparation involves making basil-infused ice cubes the night before. On the day, simply combine Pimm's with chilled lemonade in a large jug. Add the prepared basil ice and fresh strawberry slices for a uniquely flavoured, cooling drink that serves four to six people.
Ingredients
- small bunch basil
- 500ml Pimm's
- 1 1/2l chilled lemonade
- 200g sliced strawberry
Method
- The evening prior, blend the basil leaves with 500ml water. Pour this mixture into 2-3 ice cube trays and place in the freezer overnight until completely solid.
- When ready to serve, pour the Pimm's and the 1 1/2l chilled lemonade into a large jug. Introduce several of the basil ice cubes along with the 200g sliced strawberry, give it a gentle stir, and then pour into glasses.
