Barb's Zucchini Patties

Ingredients

  • 3 cups grated zucchini
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1/4 cup Bisquick (more or less)
  • 1/3 cup parmesan cheese
  • 1/2-1 teaspoon garlic powder
  • salt and pepper
  • butter or cooking spray, for frying

Method

  1. Grate the zucchini, leaving the skin and seeds unless they are very large. Sprinkle the grated zucchini with 1 teaspoon of salt and leave it to stand for 15 to 20 minutes. Afterwards, drain the zucchini thoroughly.
  2. Combine the well-drained zucchini with the beaten egg, 1/4 cup of Bisquick, 1/3 cup of Parmesan cheese, 1/2-1 teaspoon of garlic powder, and additional salt and pepper. Mix everything together until fully incorporated. the batter will be loose and not very thick.
  3. Heat a generous amount of oil in a large skillet. Drop tablespoonfuls of the batter to form patties roughly 2 to 3 inches wide. Fry them until they are browned on each side, which should take about 3 to 4 minutes per side.
  4. Transfer the cooked patties onto paper towels to absorb any excess oil. You can keep them warm in an oven until you are ready to serve them.
