Barbecued Salmon
This delicious salmon recipe originates from a feature on Kodiak Island, Alaska. It involves grilling salmon fillets with a glaze made from brown sugar, Dijon mustard, lemon juice, and fresh thyme. Ingredients
- 3 1/2-4 lbs salmon fillets
- 3 tablespoons butter, melted
- 1/3 cup brown sugar
- 1/4 cup dry white wine
- 1/4 cup lemon juice
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped fresh thyme leave
- 1 teaspoon salt
- 1/2 teaspoon pepper
Method
- Set up your charcoal or gas barbecue for cooking with indirect heat.
- Whisk together all the listed ingredients apart from the salmon until they are fully combined.
- Place the salmon skin side down on a sturdy piece of foil over the indirect heat. Cook for about 25-30 minutes, basting with the glaze every five minutes, until the centre of the thickest part appears opaque yet moist.
