Barbecue Roasted Salmon
This barbecue roasted salmon offers a deliciously simple way to prepare a high-protein meal. Salmon fillets are first marinated in a blend of pineapple and lemon juice, then coated in a fragrant spice mix featuring brown sugar, chilli powder, and cinnamon. Ingredients
- 1/4 cup pineapple juice
- 2 tablespoons lemon juice
- 4 (6 ounce) salmon fillets
- 2 tablespoons brown sugar
- 4 teaspoons chili powder
- 2 teaspoons grated fresh lemon rind
- 3/4 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
Method
- Place the salmon fillets in a large resealable bag with the pineapple juice and lemon juice. Seal the bag and let it marinate in the refrigerator for 1 hour, turning the bag now and then.
- Take the fish out of the bag and discard the used marinade. Mix together the brown sugar, chilli powder, lemon rind, cumin, salt, and cinnamon. Cover the salmon fillets evenly with this spice blend and place them in a baking dish that has been lightly oiled.
- Bake the salmon at 400° for 12 minutes. The fish is done when it flakes apart easily with a fork.
