Bananas with Mango & Passion Fruit Caramel
This Caribbean dessert offers a wonderfully sweet and refreshing finish to a meal. Ripe bananas are caramelised in a pan with sugar, then combined with a vibrant sauce of mango, passion fruit, and orange juice. The dish is finished with a bright sprinkle of lime zest and can be served warm. It's a simple, low-fat treat perfect for lunch or dinner, and can be prepared a day in advance.
Ingredients
- juice of 1 large orange
- 200g golden caster sugar
- 4 ripe passion fruits
- 1 medium-sized ripe mango peeled and thinly sliced
- 4 firm large bananas
- 1 large lime grated zest and juice
Method
- Slowly bring the orange juice and 140g/5oz of the sugar to the boil in a small pan. Halve the passion fruits and add their pulp to the pan. Stir in the sliced mango, then remove the pan from the heat once the mixture returns to a boil.
- Peel the bananas and cut each one diagonally into five pieces. Coat the banana slices with lime juice and set them aside. Evenly scatter the rest of the sugar across the bottom of a large, heavy-based frying pan. Heat the pan until the sugar dissolves and forms a golden caramel. Add the bananas to the pan and cook for 3-4 minutes, turning them once.
- Reduce the heat and mix in the prepared passion fruit and mango mixture. Warm everything through for a further 2 minutes, then spoon into serving bowls. Serve warm with a garnish of grated lime zest. This dish can be prepared a day ahead, chilled, and gently reheated before serving.
