Baked Shrimp with Lemon Garlic Crumbs

Ingredients
- 1 1/2 lbs large shrimp, peeled and deveined
- 2 cloves minced garlic
- 1/2 cup fresh breadcrumb (apprx 1 slice bread)
- 3 teaspoons finely chopped fresh parsley
- 1 teaspoon grated fresh lemon rind
- 1/4 teaspoon salt
- 2 teaspoons lemon juice
- 4 teaspoons melted butter
Method
- Turn on the food processor and feed the garlic cloves through the tube while it runs to mince them finely.
- Place cubed bread, parsley, and lemon rind into the processor and blend to create fine crumbs.
- Take the crumb mixture out and gently combine it with the salt, lemon juice, and melted butter.
- Lightly coat four individual gratin dishes with nonstick spray and arrange the shrimp equally among them.
- Evenly distribute the prepared bread crumbs over the shrimp and bake at 400° for approximately 15 minutes until the shrimp are cooked and the topping is lightly browned.
