Baked Shrimp with Lemon Garlic Crumbs

Ingredients

  • 1 1/2 lbs large shrimp, peeled and deveined
  • 2 cloves minced garlic
  • 1/2 cup fresh breadcrumb (apprx 1 slice bread)
  • 3 teaspoons finely chopped fresh parsley
  • 1 teaspoon grated fresh lemon rind
  • 1/4 teaspoon salt
  • 2 teaspoons lemon juice
  • 4 teaspoons melted butter

Method

  1. Turn on the food processor and feed the garlic cloves through the tube while it runs to mince them finely.
  2. Place cubed bread, parsley, and lemon rind into the processor and blend to create fine crumbs.
  3. Take the crumb mixture out and gently combine it with the salt, lemon juice, and melted butter.
  4. Lightly coat four individual gratin dishes with nonstick spray and arrange the shrimp equally among them.
  5. Evenly distribute the prepared bread crumbs over the shrimp and bake at 400° for approximately 15 minutes until the shrimp are cooked and the topping is lightly browned.
