Ingredients

  • 3 quince, unpeeled, washed, halved and cored
  • 18 whole cloves
  • 1.5 cups water
  • 0.5 cup port wine
  • 3 cinnamon sticks
  • 0.33333334326744 cup white sugar
  • 0.33333334326744 cup heavy cream, whipped

Method

  1. Set your oven to 375 degrees F (190 degrees C) to preheat.
  2. Insert 3 cloves into each quince half, then arrange them cut-side down in a roasting pan. Pour in the water and wine, add the cinnamon sticks, and scatter the sugar over the fruit.
  3. Place in the preheated oven and bake until the quince is lightly browned, 35 to 40 minutes. Turn the halves over and continue baking until tender, about 10 minutes more. Allow the fruit to cool slightly, about 10 minutes.
  4. To serve, spoon 1 tablespoon of the pan juices over each quince half and finish with a dollop of whipped cream.
