Baked Potato with Mushrooms

Ingredients
- 1 large baking potato
- 1 tablespoon unsalted butter
- 0.25 cup chopped onions
- 0.5 cup chopped mushrooms
- salt to taste
- 2 tablespoons nonfat plain yogurt
Method
- Heat your oven to 450 degrees F (230 degrees C).
- Use a fork to pierce the potato several times. Put it on a microwave-safe plate and microwave on high for about 10 minutes, until tender but not soft. Move the potato to a baking dish.
- Cook the potato in the heated oven for 15 minutes.
- As the potato bakes, melt the butter in a saucepan. Add the onion and cook while stirring for about 5 minutes until tender. Stir in the mushrooms, add salt, then lower the heat. Cover the pan and leave to cook without stirring for about 5 minutes until the mushrooms are tender. Take the pan off the heat.
- Take the potato from the oven. Cut it lengthwise halfway through and press gently to open it up. Spoon the onion and mushroom mixture on top, then add the yogurt.
