Baked Pork Chops
This is a flavourful and satisfying baked pork chop dish, offering a delightful departure from typical casserole recipes. The chops are coated in a homemade seasoned flour, pan-seared, and then baked in a simple, tangy sauce made with ketchup, water, and brown sugar, topped with a slice of lemon. The result is tender, juicy pork with a rich, savoury-sweet glaze. The recipe yields six generous servings.
Ingredients
- 6 pork chops
- 2 tablespoons shortening
- 2/3 cup ketchup
- 2/3 cup water
- 3 tablespoons brown sugar

- 2 cups flour
- 2 tablespoons salt
- 1 tablespoon celery salt
- 1 tablespoon pepper
- 2 tablespoons dry mustard
- 4 tablespoons paprika
- 2 tablespoons garlic powder
- 1 teaspoon ginger
- 1/2 teaspoon thyme
- 1/2 teaspoon sweet basil
- 1/2 teaspoon oregano
Method
- To make the seasoned flour, sift all the dry ingredients together until they are evenly combined, then store the mixture in a jar with a tight-fitting lid.
- Coat each of the six pork chops by dredging them in half a cup of the prepared seasoned flour.
- Place two tablespoons of shortening into a frying pan and allow it to heat.
- Once hot, brown the floured pork chops on both sides in the pan.
- Transfer the browned chops to a shallow baking dish, arranging them in a single layer.
- Place one slice of lemon on top of each pork chop.
- In a separate bowl, mix together the ketchup, water, and brown sugar.
- Pour this combined sauce mixture around and underneath the pork chops in the baking dish.
- Cover the dish and place it into an oven preheated to 350° for 30 minutes.
- Remove the cover and continue baking the chops for another 20 minutes.
- Check during baking and add a little water to the dish if the sauce appears too dry.
