Ingredients

  • 6 pork chops
  • 2 tablespoons shortening
  • 2/3 cup ketchup
  • 2/3 cup water
  • 3 tablespoons brown sugar
  • lemon slice
  • 2 cups flour
  • 2 tablespoons salt
  • 1 tablespoon celery salt
  • 1 tablespoon pepper
  • 2 tablespoons dry mustard
  • 4 tablespoons paprika
  • 2 tablespoons garlic powder
  • 1 teaspoon ginger
  • 1/2 teaspoon thyme
  • 1/2 teaspoon sweet basil
  • 1/2 teaspoon oregano

Method

  1. To make the seasoned flour, sift all the dry ingredients together until they are evenly combined, then store the mixture in a jar with a tight-fitting lid.
  2. Coat each of the six pork chops by dredging them in half a cup of the prepared seasoned flour.
  3. Place two tablespoons of shortening into a frying pan and allow it to heat.
  4. Once hot, brown the floured pork chops on both sides in the pan.
  5. Transfer the browned chops to a shallow baking dish, arranging them in a single layer.
  6. Place one slice of lemon on top of each pork chop.
  7. In a separate bowl, mix together the ketchup, water, and brown sugar.
  8. Pour this combined sauce mixture around and underneath the pork chops in the baking dish.
  9. Cover the dish and place it into an oven preheated to 350° for 30 minutes.
  10. Remove the cover and continue baking the chops for another 20 minutes.
  11. Check during baking and add a little water to the dish if the sauce appears too dry.
