Baked Fried Chicken

Ingredients
- 3/4 cup flour
- 1/4 cup seasoned bread crumbs
- 2 tablespoons Old Bay Seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 -2 lb frying chicken (Skin on!)
- oil (for frying)
Method
- In a large skillet or frying pan, heat the oil to 375 degrees.
- Turn your oven on to preheat to 300 degrees.
- Mix all the dry ingredients together in a bowl.
- Lightly dampen the chicken pieces with water if they seem dry.
- Coat each piece of chicken thoroughly in the prepared flour and crumb mixture.
- Fry the chicken briefly, turning to brown and crisp all sides.
- Transfer the chicken to a covered baking dish and bake at 300 degrees for 30 minutes.
- Take off the cover and bake for a further 20-30 minutes to crisp the chicken again before serving.
