Bahia-style Moqueca Prawn Stew
This authentic Brazilian moqueca is a rich and creamy seafood casserole. Prawns are marinated in lime and garlic before being simmered in a fragrant coconut milk sauce with peppers, tomatoes and spices. Finished with fresh coriander, it's a colourful and aromatic dish that's ready in 40 minutes and serves four people perfectly with steamed rice.
Ingredients
- 450g large, raw, peeled prawn
- 75ml lime juice
- 3 garlic cloves finely chopped
- 3 tbsp coconut oil
- 4 spring onions chopped
- 1 onion sliced into half moons
- 1 red pepper thinly sliced
- 1 tsp chilli flakes
- 2 tsp paprika
- 3 plum tomatoes deseeded and chopped
- 400ml coconut milk
- 2 tbsp chopped coriander
- steamed rice to serve
Method
- Combine the prawns in a bowl with 2 tbsp of the lime juice, 1 tsp of salt and 1 tbsp of the chopped garlic. Refrigerate this mixture for 1 hr.
- Warm the coconut oil in a large saucepan. Cook the spring onion and onion for 5 mins, then introduce the red pepper, chilli flakes, paprika and the rest of the garlic.
- Add the tomatoes, coconut milk and a pinch of salt. Let it come to a simmer and cook for 10 mins to thicken. Stir in the prawns along with all the marinade and the remaining lime juice. Simmer gently for about 3 mins until the prawns are opaque. Garnish with the fresh coriander and accompany with rice.
