Bacon, Sundried Tomato and Feta Rolls
These homemade savoury rolls feature a buttery pastry filled with a flavourful combination of chopped bacon, sundried tomatoes and crumbled feta cheese, finished with fresh basil. The pastry is made from scratch, chilled, then rolled out and filled before being baked until golden. Perfect for parties, this recipe yields 24 to 30 individual snack-sized portions.
Ingredients
- 1 egg beaten
- 225g plain flour plus extra for dusting
- 175g frozen butter
- 10 streaky bacon rashers, finely chopped
- 100g sundried tomato in oil (about 12-16), finely chopped
- 100g feta cheese crumbled
- small bunch fresh basil chopped
Method
- To prepare the pastry, sift 225g plain flour with a pinch of salt into a large bowl. Grate 175g of frozen butter into the bowl. Combine with a kitchen knife until the butter pieces are fully coated in flour. Add 150ml cold water and stir to create a soft dough, then bring it together with your hands. Wrap the dough in cling film and refrigerate for 30 mins.
- Preheat the oven to 200C/180C fan/gas 6. Lightly flour a work surface and roll half of the pastry into a long rectangle measuring roughly 9 x 45cm. Distribute half of the chopped bacon, sundried tomato, feta and basil along one edge of the pastry. Brush the opposite edge with beaten egg, then fold it over the filling to form a long roll, pressing the edges to seal. Brush the top with more egg, then slice into 3cm-long rolls. Use scissors to make small 'V' shaped cuts on top of each one.
- Repeat the process with the second half of the pastry and the remaining filling. Place all the rolls on baking trays lined with parchment paper. Bake for 15-20 mins until they turn a golden brown colour.
