This delightful salad combines fresh baby spinach with sweet pineapple chunks, crumbled crispy bacon, chopped hard boiled eggs and diced green onion. The flavourful dressing, made with reserved pineapple juice, sesame seeds, ground ginger, garlic salt, white wine vinegar and salad oil, is prepared in advance and chilled to allow the tastes to develop fully. It's a quick and tasty dish perfect for a light meal.

Baby Spinach and Pineapple Salad

Ingredients

  • 1 (15 ounce) can pineapple chunks (drain and set aside juice)
  • 5 cups baby spinach leaves
  • 6 slices bacon, fried crisp and crumbled
  • 2 hardboiled egg, chopped
  • 1/4 cup diced green onion
  • 1/4 cup salad oil
  • 2 tablespoons sesame seeds
  • reserved pineapple juice
  • 3 tablespoons white wine vinegar
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon ground ginger

Method

  1. Arrange the baby spinach leaves in a large salad bowl and layer the remaining salad components on top.
  2. Place the prepared salad in the refrigerator until you are ready to serve.
  3. Warm the salad oil in a skillet, then stir in the sesame seeds and cook until they turn a golden brown colour.
  4. Pour in the rest of the dressing ingredients and stir thoroughly to combine everything.
  5. Move the completed dressing to a jar with a lid and chill it in the fridge for several hours.
  6. Give the jar a vigorous shake immediately prior to dressing the salad.
