This Italian pasta dish combines spaghetti with the bright flavours of lemon, briny olives and tender artichoke hearts. A quick Parmesan and olive oil sauce is tossed with the hot pasta and finished with fresh rocket. It is a speedy and satisfying main course, requiring minimal preparation and cooking time. Perfect for a simple weeknight dinner.

Artichoke, Olive and Lemon Pasta

Ingredients

  • 400g spaghetti
  • zest and juice 1 lemon
  • 3 tbsp olive oil
  • 50g freshly grated parmesan
  • 100g artichoke heart from a jar
  • handful black olive
  • 100g bag wild rocket

Method

  1. Cook the spaghetti in boiling water. As it cooks, combine the lemon zest and juice with the olive oil and grated Parmesan in a bowl.
  2. Drain the cooked pasta, saving 3 tbsp of the starchy water. Place the pasta back into the pan and add the lemon mixture, the reserved water, the artichoke hearts and the black olives. Warm everything together for a moment, season generously, mix in the wild rocket and serve immediately.
