Apricot-Glazed Pork Chops

They are then finished in a sweet and tangy glaze made by simmering apricot preserves with fruity white wine and ground ginger. Ingredients
- 0.33333334326744 cup apricot preserves
- 0.33333334326744 cup fruity white wine, such as Gewurztraminer
- 0.5 teaspoon ground ginger
- salt and pepper to taste
- 2 tablespoons olive oil
- 4 boneless pork chops, 1/2 inch thick
Method
- Combine the apricot preserves, wine, and ground ginger in a small bowl and set this mixture aside.
- Pat the pork chops dry and season them with salt and pepper. Warm the olive oil in a skillet. Cook the chops until browned on both sides and cooked through, approximately 4 minutes per side. Transfer them to a plate. Lower the heat. Pour the apricot mixture into the same skillet and let it bubble until it thickens, about 4 minutes. Place the pork chops back into the skillet, turning to cover them in the sauce, and cook for 1 minute.
