Ingredients

  • 1 1/2 cups self-rising flour
  • 1 tablespoon sugar
  • 2 eggs, beaten
  • 2/3 cup milk
  • 1 tablespoon vegetable oil
  • 3 cups apples, peeled and chopped (finely)
  • hot vegetable oil (for frying, to equal 1/2 inch deep)
  • confectioners' sugar

Method

  1. Mix the self-rising flour and sugar together in a bowl.
  2. Pour in the beaten eggs, milk, 1 tablespoon of vegetable oil, and the chopped apples.
  3. Gently stir the mixture until the ingredients are just incorporated.
  4. Carefully drop spoonfuls of the prepared batter into the hot vegetable oil.
  5. Fry the fritters for 3-4 minutes on each side until they turn a golden brown colour.
  6. Transfer the cooked fritters onto paper towels to drain any excess oil.
  7. Coat the warm fritters generously in powdered sugar before serving.
