Apple Cheese Danish
This impressive breakfast pastry features a creamy filling made from cottage cheese and cream cheese, sweetened with sugar and vanilla. The mixture is spread onto squares of puff pastry, topped with fresh apple slices, and folded into a classic danish shape. After a sprinkle of sugar, they bake until beautifully golden. Ingredients
- 1 (24 ounce) carton cottage cheese
- 3 apples - peeled, cored and thinly sliced
- 1 teaspoon lemon juice
- 1 (8 ounce) package cream cheese, at room temperature
- 0.5 cup white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 (17.5 ounce) package frozen puff pastry, thawed
- 3 tablespoons white sugar for decoration
Method
- Set your oven to 400 degrees F (200 degrees C). Prepare two baking sheets by lining them with parchment paper.
- Drain the cottage cheese in a strainer lined with cheesecloth or sturdy paper towels for 5 to 10 minutes. Use paper towels to pat it dry and set it aside. In a separate bowl, toss the thinly sliced apples with the lemon juice.
- In the bowl of an electric mixer, combine the drained cottage cheese, cream cheese, 1/2 cup sugar, egg, and vanilla extract. Beat on high speed for 1 to 2 minutes until the mixture is nearly smooth.
- Take each sheet of puff pastry and cut it into 9 pieces. Roll out each piece to form a 5 x 5-inch square.
- Position a pastry square so it resembles a diamond. Spoon a generous portion of the cheese filling down the centre, leaving a 1/4 inch border at the top and bottom. Arrange 4 to 5 apple slices in a fan shape over the cheese. Fold the left and right corners into the middle and pinch them together to seal.
- Place each assembled pastry on a prepared baking sheet. Repeat with all remaining pieces, then sprinkle them with 3 tablespoons sugar. Bake in your preheated oven for about 20 minutes until they turn golden brown.
