This simple recipe turns a seasonal abundance of apples and blackberries into a delicious homemade jam. With only four ingredients, you can create a preserve that is ideal for gifting or enjoying yourself. The method involves cooking the fruit until soft, then adding sugar and boiling to the setting point. The finished jam will keep well when stored correctly in sterilised jars.

Apple & Blackberry Jam

Ingredients

  • 500g Bramley apples peeled, cored, quartered and cut into 2cm chunks
  • 1 lemon juiced
  • 500g blackberries fresh or frozen
  • 1kg granulated sugar

Method

  1. Place two small plates into the freezer for later use to check the jam's set. In a heavy-based or preserving pan, combine the apple chunks with the lemon juice and 250ml water. Bring this mixture to a boil, then reduce the heat and let it cook for 5-8 mins until the fruit has softened.
  2. Stir in the blackberries and the granulated sugar. Continue stirring over a gentle heat until all the sugar has completely dissolved. Then increase the heat and allow the jam to simmer steadily for 30-35 mins until it reaches the setting point.
  3. To check if the jam is ready, remove one plate from the freezer. Spoon a small amount of the hot jam onto the cold plate. If it sets and forms a wrinkle when you push your finger through it, the jam has reached setting stage.
  4. Carefully pour the hot jam into a sterilised jar using a funnel. Allow the jam to cool completely before sealing the lid tightly. When stored in a sealed, sterilised jar in the refrigerator, the jam will keep for six months.
