Anytime Sweetcorn and Tomato Nachos
These cheesy Mexican nachos are an ideal snack or buffet item. A fresh salsa is made by combining avocado, sweetcorn, tinned tomatoes, onion and coriander. This mixture is spooned onto tortilla chips, covered with grated cheddar and grilled for 3-5 minutes until the cheese melts. Serve immediately for a delicious, quick treat that can also double as a healthy dip.
Ingredients
- 1 avocado
- 200g can sweetcorn rinsed and drained
- 1⁄2 onion finely chopped
- large handful coriander leaves, chopped
- bag lightly salted tortilla chips
- big handful grated cheddar
- 200g tin chopped tomato
Method
- Slice the avocado lengthwise around the stone, twist to separate the halves and remove the stone. Score one half with diagonal cuts in a criss-cross pattern. Use a large spoon to scoop the diced avocado from the skin, repeating with the other half.
- Set your grill to high. Combine the avocado with the drained sweetcorn, the chopped tomatoes including their juice, the finely chopped onion and the chopped coriander leaves. Place a layer of tortilla chips on a baking sheet. Top each chip with a spoonful of the salsa, then scatter the grated cheddar cheese evenly over everything. Grill for 3-5 mins until the cheese is melted and bubbling. Enjoy immediately.
