This warming chai is a dairy-free beverage infused with aromatic spices. Fresh ginger, cardamom, cloves and a cinnamon stick are simmered in soymilk to create a deeply flavoured drink. It is sweetened with brown sugar to taste, then strained and served hot. Perfect for sharing, this recipe yields eight servings and takes just half an hour to prepare.

Amsterdam Hippie Soymilk Chai

Ingredients

  • 2 quarts soy milk
  • 4 inch piece fresh ginger root - peeled, sliced and crushed
  • 1.5 tablespoons whole cardamom pods, coarsely crushed
  • 1 tablespoon whole cloves, coarsely crushed
  • 1 cinnamon stick
  • 2 tablespoons brown sugar

Method

  1. Place the soymilk in a saucepan and bring it to a boil over high heat.
  2. Lower the heat to medium and add the ginger, cardamom, cloves and cinnamon stick.
  3. Allow the mixture to simmer for 15 minutes, giving it an occasional stir.
  4. Add brown sugar to the pan and stir until it is sweetened to your liking.
  5. Pour the chai through a strainer into a different pot to remove the whole spices.
  6. Serve the beverage immediately while it is hot.
