This Italian dessert offers a delightful twist on a classic. Ripe peach halves are filled with a rich mixture of crushed amaretti biscuits, almonds, dark chocolate and honey, then baked until tender. The result is a warm, fragrant treat, perfectly complemented by a cool dollop of mascarpone or crème fraîche and a final dusting of cocoa powder. It's an elegant yet simple finale to any meal.

Amaretti Peaches with Honey and Chocolate

Ingredients

  • 6large just ripe but firm peaches
  • 15 loose (or 9 paper-wrapped) amaretti biscuits
  • scant blanched almond
  • 85g dark chocolate (minimum 60% cocoa solids), roughly broken
  • 1large egg beaten
  • 2 tbsp honey – clear or set
  • 500g tub crème fraîche or mascarpone
  • a little cocoa powder

Method

  1. Set your oven to 200C/gas 6/fan 180C. Cut the peaches in half and remove the stones. Use a sharp spoon to scoop a little flesh from the middle of each half, setting both the flesh and peach shells aside.
  2. Place the amaretti biscuits, blanched almonds and broken chocolate into a food processor. Pulse the mix until it resembles coarse gravel. Add the reserved peach flesh, the beaten egg and the honey, then whizz briefly just to combine everything, being careful not to over-process.
  3. Fill the peach halves with the stuffing, piling it up slightly. Place the peaches in one layer inside a sturdy baking tin. Bake them for 25-30 minutes until the fruit is soft and the topping is a golden brown. Serve while hot, each portion topped with a spoonful of mascarpone or crème fraîche and a light sprinkle of sifted cocoa powder.
