African Greens With Green Pepper

Ingredients

  • 1 tablespoon oil (less if you are using a nonstick pan)
  • 1 onion, finely chopped
  • 1 sweet green pepper, chopped (bell pepper)
  • 1 ripe tomatoes, chopped (may sub 1 can of tomatoes, drained)
  • 1/4 cup water
  • 1 1/2 lbs spinach, cleaned
  • salt and black pepper
  • 1 pinch cayenne pepper (or more to taste, may use red pepper flakes)
  • 1/2 cup peanut butter (fresh is best in this recipe)

Method

  1. Cook the finely chopped onion and green pepper in the oil within a large saucepan until they start to soften.
  2. Introduce the chopped tomato, the cleaned spinach, and the water to the pan. Cover it and let it simmer, stirring now and then, until everything has softened.
  3. Mix in the salt, black pepper, cayenne pepper, and the peanut butter.
  4. Turn the heat down to its lowest setting and continue stirring until the sauce becomes completely smooth.
