Aegean Shrimp Salad
This vibrant Greek salad combines succulent shrimp with a zesty dressing of white wine vinegar, fresh cilantro, and olive oil. Ingredients
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh cilantro
- 1/4-1/2 teaspoon sugar
- 3/4 teaspoon kosher salt, divided
- 2 tablespoons olive oil, plus
- 2 teaspoons olive oil, divided
- 1 lb medium shrimp, shelled and deveined
- 1 -2 clove garlic, minced,according to taste
- 1/4 teaspoon crushed red pepper flakes
- 1/2 lb mesclun or 1/2 lb mixture greens
- 4 ounces feta cheese, crumbled
Method
- Mix the white wine vinegar, cilantro, 1/2 tsp salt, and sugar together in a medium bowl.
- Gradually whisk in the 2 tablespoons of olive oil until combined.
- Set this dressing mixture aside for later.
- Warm the remaining 2 teaspoons of oil in a medium skillet.
- Add the shrimp, minced garlic, red pepper flakes, and the remaining 1/3 tsp salt to the skillet.
- Cook the shrimp for 2-4 min until they turn opaque.
- Combine the cooked shrimp and the prepared dressing with the mixed greens.
- Toss everything thoroughly to coat the salad evenly.
- Top the finished salad with the crumbled feta cheese before serving.
