These classic Danish pancakes, known as aebleskiver, are a delightful breakfast treat. The batter is flavoured with warm spices including cinnamon, nutmeg and cloves, creating a fragrant and comforting dish. Cooked in a special pan, they form perfect golden spheres. Aebleskiver (Danish Pancakes)

Ingredients

  • 1 cup whole wheat flour
  • 2 tablespoons white sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 1 dash ground nutmeg
  • 1 dash ground cloves
  • 1 egg, lightly beaten
  • 0.75 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Method

  1. In a large bowl, combine the whole wheat flour, white sugar, baking powder, salt, ground cinnamon, nutmeg and cloves. Add the lightly beaten egg, milk, melted unsalted butter and vanilla extract, stirring until the mixture is just combined.
  2. Place an aebleskiver pan on the hob to heat. Coat the cups lightly with cooking spray.
  3. Fill each prepared cup about 2/3 full with batter. Let the batter cook for 3 to 4 minutes until the bottom is golden brown. Remember the order you filled them. Using a long skewer or knitting needle, lift one edge and rotate the pancake a 1/4 turn. The uncooked batter will flow into the cup to cook. Keep lifting and turning the edges until the batter is cooked through and forms a golden brown ball. Transfer to paper towels to drain.
