Adriatica Prawns Skiathos
This dish features prawns cooked in a vibrant sauce of tomatoes, white wine, and lemon, enriched with creamy feta cheese. Fresh basil and parsley add a herbal lift. It is served over a bed of pasta for a complete meal that comes together in under half an hour, making it an ideal choice for a quick yet impressive dinner.
Ingredients
- 1/2 cup olive oil
- 1 1/3 cups minced onions
- 1 1/2 tablespoons minced garlic
- 2 cups tomatoes, peeled,seeded and chopped
- 2/3 cup dry white wine
- 1/4 cup lemon juice
- 1/4 teaspoon crushed red pepper flakes, to taste
- 24 ounces raw prawns (shelled/deveined)
- 1 lb feta cheese, divided in half
- 2 tablespoons chopped fresh basil
- 1/4 cup chopped fresh parsley
- 12 ounces dry pasta or 24 ounces fresh pasta
Method
- Warm the olive oil in a large saute pan. Cook the minced onions and garlic until softened without browning. Stir in the chopped tomatoes and cook for 1 minute. Pour in the white wine and lemon juice, along with the red pepper flakes. Let the mixture reduce for about 1 minute.
- Introduce the raw prawns and half of the feta cheese to the pan, along with all the chopped basil. Continue cooking until the prawns are fully cooked and the feta has melted into a creamy consistency, which should take about 3 minutes.
- While the sauce cooks, prepare the pasta in boiling water until it reaches an al dente texture. Drain the cooked pasta and arrange it on a serving platter. Top the pasta with the prepared prawn and sauce mixture.
- Crumble the remaining half of the feta cheese over the assembled dish. Finish with a sprinkle of chopped fresh parsley before serving immediately.
