This is a fantastic Jamaican inspired chicken recipe. The chicken strips are marinated in a piquant sauce made with brown sugar, soy sauce, red wine vinegar, thyme, garlic, allspice and a fiery habanero pepper. After marinating, the chicken is broiled until cooked through. The remaining sauce is warmed and poured over the finished dish, creating an unforgettable meal that pairs wonderfully with rice.

A Jerky Chicken

Ingredients

  • 1 teaspoon onion, finely chopped
  • 3 tablespoons brown sugar
  • 4 tablespoons soy sauce
  • 4 tablespoons red wine vinegar
  • 2 teaspoons chopped fresh thyme
  • 1 teaspoon sesame oil
  • 3 cloves garlic, chopped
  • 0.5 teaspoon ground allspice
  • 1 habanero pepper, sliced
  • 4 skinless, boneless chicken breast halves - cut into 1 inch strips

Method

  1. In a food processor or blender, blend the chopped onion, brown sugar, soy sauce, red wine vinegar, fresh thyme, sesame oil, chopped garlic, ground allspice and sliced habanero pepper until you have a smooth mixture.
  2. Put the chicken breast strips into a large resealable bag and pour in about three quarters of the prepared sauce. Seal the bag tightly after pressing out the air, then let the chicken marinate in the fridge for a minimum of one hour.
  3. Turn on your oven's broiler to preheat.
  4. Take the chicken out of the bag, discarding the used marinade. Place the chicken under the broiler and cook for 10 to 15 minutes, turning the pieces once during cooking.
  5. While the chicken cooks, gently warm the leftover sauce in a small pan. Pour this heated sauce over the broiled chicken just before you serve it.
