Ingredients

  • 2/3 cup buttermilk
  • 8 boneless skinless chicken breasts (2 1/2 lb)
  • 1 cup corn flakes
  • 1 cup original Bisquick baking mix or 1 cup Gold Medal all-purpose flour
  • 2 (1 ounce) packages ranch dressing mix (dry)

Method

  1. Set your oven to 400ºF. Prepare a cookie sheet by coating it with cooking spray.
  2. Place the buttermilk in a shallow bowl. Add the chicken pieces, turning them to ensure they are fully coated. Allow them to rest for 5 minutes.
  3. While the chicken soaks, put the corn flakes into a 2-quart resealable plastic bag. Use a rolling pin to crush them. Add the Bisquick mix and the dry ranch dressing mix to the bag. Take the chicken from the buttermilk, discarding the leftover liquid. Place the chicken pieces into the bag with the cereal mixture. Seal the bag and shake it well to coat the chicken evenly.
  4. Arrange the coated chicken on the prepared cookie sheet. Lightly spray the tops with cooking spray. Bake for 45 to 50 minutes, until the chicken juices run clear when the thickest part is pierced and it reaches 170°F.
