These tender pork ribs are first simmered in a fragrant broth infused with ginger, garlic, soy sauce and five-spice powder. After cooking, they are brushed with a rich Chinese barbecue sauce made from plum and hoisin sauces, then baked until the glaze caramelises. The reduced cooking liquid is warmed and poured over the ribs just before serving, adding extra moisture and depth of flavour. This recipe yields four servings and takes about 40 minutes to prepare and cook.
