Texas Style Casserole
This Texan-inspired breakfast bake layers frozen hash browns with corn, pepper strips and sliced turkey sausage. A mixture of skim milk, eggs and seasoning is poured over the top before a final sprinkling of low fat cheddar cheese. It bakes in the oven until golden and set, then is sliced into portions for a complete morning meal.
Ingredients
- olive oil flavored cooking spray
- 2 cups frozen hash brown potatoes
- 1 cup frozen corn kernels, thawed
- 1 cup frozen pepper, strips thawed
- 8 ounces raw turkey sausage, thinly sliced
- 1 cup skim milk
- 2 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup shredded cheddar cheese, low fat
Method
- Heat your oven to 350°F.
- Use cooking spray to grease a medium sized baking dish.
- Arrange the hash brown potatoes in the dish, followed by the corn and pepper strips. Place the sliced sausage on top.
- Whisk the skim milk, eggs, salt and pepper in a separate bowl. Pour this mixture evenly over the sausage layer. Finish by scattering the shredded cheese over the top.
- Bake the casserole for about 45 minutes, until it is heated through and the cheese has turned a golden brown.
- Slice the finished bake into six equal pieces before serving.
