This Texan-inspired breakfast bake layers frozen hash browns with corn, pepper strips and sliced turkey sausage. A mixture of skim milk, eggs and seasoning is poured over the top before a final sprinkling of low fat cheddar cheese. It bakes in the oven until golden and set, then is sliced into portions for a complete morning meal.

Texas Style Casserole

Ingredients

  • olive oil flavored cooking spray
  • 2 cups frozen hash brown potatoes
  • 1 cup frozen corn kernels, thawed
  • 1 cup frozen pepper, strips thawed
  • 8 ounces raw turkey sausage, thinly sliced
  • 1 cup skim milk
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup shredded cheddar cheese, low fat

Method

  1. Heat your oven to 350°F.
  2. Use cooking spray to grease a medium sized baking dish.
  3. Arrange the hash brown potatoes in the dish, followed by the corn and pepper strips. Place the sliced sausage on top.
  4. Whisk the skim milk, eggs, salt and pepper in a separate bowl. Pour this mixture evenly over the sausage layer. Finish by scattering the shredded cheese over the top.
  5. Bake the casserole for about 45 minutes, until it is heated through and the cheese has turned a golden brown.
  6. Slice the finished bake into six equal pieces before serving.
