5-Minute Yoghurt and Fruit Parfaits

Ingredients

  • 3 cups vanilla low-fat yoghurt
  • 1 cup fresh or defrosted frozen strawberries in juice
  • 1 pint fresh blackberries, raspberries or blueberries
  • 1 cup good quality granola

Method

  1. Place one third of a cup of vanilla yoghurt into the base of four tall glasses.
  2. Mix together the defrosted strawberries along with their juice and the fresh berries.
  3. Continue building the parfaits by adding alternating layers of the fruit mixture, granola, and more yoghurt until the glasses are full.
  4. Serve the parfaits straight after assembling so the granola remains crunchy.
