This recipe delivers a satisfying Mexican-style meal in a remarkably short time. Canned roast beef is combined with green chillies and spices to create a rich, saucy filling. The burritos are assembled with warm refried beans and cheese, then topped with more sauce and a cool dollop of sour cream for a complete, quick dinner that's full of flavour.

5 Minute Wet Beef and Green Chile Burritos

Ingredients

  • 1 (12 ounce) can roast beef in gravy
  • 1 (7 ounce) can diced green chilies
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1/4 cup beef broth
  • 2 teaspoons Wondra Flour
  • 1 (15 ounce) can refried beans
  • 1 cup shredded monterey jack pepper cheese
  • 4 flour tortillas
  • 4 tablespoons sour cream

Method

  1. Put the canned roast beef into a saucepan and use a fork to break it apart.
  2. Stir in the diced green chillies, garlic powder, chili powder, ground cumin, beef broth and Wondra Flour.
  3. Allow the mixture to come to a boil, then let it simmer for 2 minutes.
  4. Transfer the refried beans to a microwave-safe bowl, cover it with plastic wrap, and microwave for about 2 - 3 minutes until hot.
  5. Warm the flour tortillas individually over a gas flame, turning often, or use a griddle or frying pan, flipping once.
  6. Lay a heated tortilla flat and spoon a layer of refried beans onto it. Use a slotted spoon to add a portion of the beef mixture over the beans, then sprinkle with shredded cheese.
  7. Fold the two sides of the tortilla inward by about 2 inches. Begin rolling from the edge nearest to you, tucking the filling in as you roll away from yourself.
  8. Spoon some of the beef and green chile sauce over the assembled burrito and add more cheese. Finish with a spoonful of sour cream.
  9. Note: If there is a Costco near you, the Kirkland brand canned roast beef is very good.
