Single Serving Apple Crisp
This individual apple crisp is prepared in the microwave for a speedy dessert. It features a topping made from oats, pecans, and coconut oil. The apples are tossed with cinnamon and sugar before being layered in a ramekin and cooked. It is ready to enjoy after a brief cooling period, optionally drizzled with honey. This recipe yields two single portions.
Ingredients
- 3 tablespoons coconut oil
- 1/4 cup quick oats
- 2 tablespoons chopped pecans
- 2 1/2 tablespoons whole wheat flour (divided)
- 2 1/2 tablespoons turbinado or brown sugar (divided)
- 1/2 teaspoon cinnamon (divided)
- 1/8 teaspoon salt
- 2-3 apples (about 2 cups chopped)
- honey for drizzling
Method
- Microwave the coconut oil until melted. Combine it with the oats, pecans, 2 tablespoons of the whole wheat flour, 2 tablespoons of the sugar, 1/4 teaspoon of the cinnamon, and the salt. Stir until everything is mixed thoroughly.
- Dice the apples and combine them with 1/2 tablespoon of the whole wheat flour, 1/2 tablespoon of the sugar, and 1/4 teaspoon cinnamon.
- Place a small amount of the oat mixture into the base of two 9 ounce ramekins. Add roughly 1 cup of the apple mixture to each, then pile the rest of the oat topping over them. Microwave for 3 minutes and 30 seconds until the apples are bubbling. Allow it to cool before eating, as it will be very hot. The texture gets better as it cools. Finish with a honey drizzle if desired.
