5-Minute Radicchio and Watercress Salad
This American side dish combines hearty radicchio and peppery watercress for a vibrant salad. Thinly sliced radishes add crunch, while a simple dressing of fresh lemon juice and extra-virgin olive oil brings it all together. Seasoned with kosher salt, it's a fast and flavourful accompaniment perfect for a weeknight meal, requiring only a few minutes to prepare.
Ingredients
- 4 ounces radicchio (about 1/2 medium head; 225g), cored, leaves torn into bite-size pieces
- 1/2 bunch watercress or arugula (about 2 ounces; 55g)
- 2 radishes, very thinly sliced
- 1 teaspoon (5ml) fresh juice from 1 lemon
- 1 tablespoon (15ml) extra-virgin olive oil
- Kosher salt
Method
- Place the torn radicchio, watercress or arugula, and sliced radishes into a large mixing bowl.
- Add the fresh lemon juice and extra-virgin olive oil to the bowl.
- Toss all the ingredients together until evenly combined.
- Season the salad with kosher salt to your taste.
- Serve the salad straight away.
