This Japanese salmon dish is remarkably simple and quick to prepare. A marinade of miso, sake, soy sauce and sugar coats the fillets, which are then broiled until beautifully charred. The recipe requires minimal effort and yields a flavourful, impressive entree in about 40 minutes total, including optional marinating time. It's a fantastic way to enjoy salmon with deep, umami-rich flavours.

Miso Glazed Salmon

Ingredients

  • 1/4 cup red or white miso
  • 1/3 cup sake
  • 1 tablespoon soy sauce
  • 2 tablespoons vegetable oil
  • 1/4 cup sugar
  • 4 skinless salmon filets, at least 1 inch thick, 5 to 6 ounces each

Method

  1. Combine the miso, sake, soy sauce, oil, and sugar in a bowl, whisking until smooth. Coat the salmon fillets thoroughly with this mixture. Place them in a sealable bag or container. You can cook them now or, for enhanced flavour, let them marinate for about 30 minutes or for up to 2 days.
  2. Set your broiler, whether in a toaster oven or standard oven, to high. Line a small broiler pan with aluminium foil. Remove the salmon from its container, wiping off any excess marinade, and arrange it on the prepared pan. Broil for about 5 minutes until the top is nicely charred and the centre is just warm, shielding any spots that may burn with the foil. Serve straight away.
