Homemade Swiss Miss Mix

Ingredients

  • 5 ounces powdered sugar
  • 2 3/4 ounces white chocolate, broken into pieces
  • 1 1/2 ounces cocoa powder
  • 1 1/4 ounces dark chocolate, broken into pieces
  • Pinch of salt
  • 1 vanilla bean, split and scraped
  • 1/2 teaspoon instant coffee
  • 3/4 cup whole milk
  • 1 ounce cocoa mix
  • Marshmallows

Method

  1. To make the cocoa mix, place the powdered sugar, white chocolate pieces, cocoa powder, dark chocolate pieces, salt, scraped vanilla bean seeds, and instant coffee into a food processor bowl. Pulse the ingredients until they become a fine powder. Pause for a minute if the processor feels warm to let it cool, then pulse again until no big chocolate pieces are visible. Avoid running the processor non-stop to prevent warming and melting the chocolate, which could make the mix clumpy. Put the finished cocoa mix into a sealed container. It can be stored at room temperature until the chocolate's expiry date.
  2. To prepare a cup of hot cocoa, heat 3/4 cup of whole milk in a saucepan until it boils. Lower the heat to a simmer and add 1 ounce of the cocoa mix, whisking for about 1 minute until it fully dissolves. You can add more mix if you prefer a stronger flavour. Take the pan off the heat. Pour into a mug and top with marshmallows if you like.
