5-Minute Healthy Sautéed Red Cabbage
This vibrant red cabbage dish is prepared in a flash. The cabbage is shredded and briefly sautéed in broth to retain its crunch and colour, then tossed while hot with a flavourful dressing featuring lemon, garlic, ginger, and sesame. It's a simple, healthy vegetable side that pairs well with many meals.
Ingredients
- 4 cups red cabbage, shredded
- 1 tablespoon lemon juice
- 5 tablespoons chicken stock or 5 tablespoons vegetable broth
- 3 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 garlic clove, medium, chopped
- sea salt, to taste
- pepper, to taste
- 2 tablespoons ginger, grated
- 1 tablespoon sesame seeds
- soy sauce, 5 drops
- 1 tablespoon cilantro, chopped
- rice vinegar or rice wine, a few drops
Method
- Cut the cabbage into quarters, then slice it into 1/4-inch strips. Allow it to rest for at least 5 minutes.
- Prepare the garlic by chopping or pressing it and let it sit for at least 5 minutes.
- Coat the cabbage with 1 tablespoon of lemon juice before you begin cooking.
- Warm 5 tablespoons of broth in a skillet. Once it steams, add the cabbage, cover the pan, and cook for no more than 5 minutes.
- Move the cabbage to a bowl. While it is still hot, mix it with the dressing and any optional additions like ginger, sesame seeds, soy sauce, cilantro, or rice vinegar.
