Ideal for a fast weeknight dinner, this American salad combines preshredded broccoli slaw and carrots with a creamy, tangy sauce made from coconut milk, sour cream, and green curry paste. It's tossed with golden raisins and sunflower seeds for texture, then chilled before serving. This healthy dish comes together in only 20 minutes total time.
Ingredients
- 1 bag preshredded coleslaw (I used the broccoli slaw)
- 1 cup shredded carrots
- 1/3 cup coconut milk
- 1/2 cup light sour cream
- 2 tablespoons sugar
- 1 tablespoon green curry paste
- 1 teaspoon curry powder
- 1 teaspoon vinegar
- 1/4 cup golden raisins
- 1/4 cup sunflower seeds or other nuts
- fresh cilantro
Method
- Combine the coconut milk, sour cream, sugar, green curry paste, and curry powder by whisking them together.
- Place the coleslaw and shredded carrots into a large bowl, then pour the sauce over and toss to coat. Mix in the raisins, sunflower seeds, and fresh cilantro until everything is evenly distributed.
