5-Minute Greek Garbanzo Bean Salad
This speedy Mediterranean salad is perfect when time is short. Using convenient canned garbanzo beans, it combines fresh tomato, red onion, and garlic with a simple lemon and olive oil dressing. Finished with optional feta and olives, it's a fibre-packed, healthy dish that comes together in moments. It serves two people perfectly.
Ingredients
- 1 (15 ounce) can garbanzo beans (bpa-free)
- 2 medium garlic cloves (minced or pressed)
- 1 medium tomatoes, diced
- 1/2 medium red onion, chopped
- 2 tablespoons parsley, chopped
- 1 tablespoon fresh lemon juice
- 3 tablespoons extra virgin olive oil
- salt and pepper
- 1/4 cup feta cheese (optional)
- 6 sliced kalamata olives (optional)
- 1 teaspoon rosemary (optional)
Method
- Press or mince the garlic cloves and allow them to rest for at least 5 minutes.
- Drain the liquid from the can of garbanzo beans and rinse them thoroughly under cold running water.
- Mix the rinsed beans with the diced tomato, chopped red onion, parsley, lemon juice, and extra virgin olive oil.
- Season the combined ingredients with salt and pepper according to your preference.
