General Tso's Chicken
This homemade General Tso's chicken offers a faster alternative to takeout. Using frozen chicken tenders as a base, the dish is baked until crisp, then tossed in a sweet and spicy sauce with steamed broccoli. It's a complete meal ready in about 35 minutes, perfect for a speedy weeknight dinner. Serve it over steamed white rice with a garnish of scallions and sesame seeds for added flavour and texture.
Ingredients
- one package frozen chicken tenders (1-pound)
- 1 large crowns broccoli, cut into 2-inch florets, about 8 ounces
- kosher salt
- 1 tablespoon cornstarch
- 1/4 cup rice wine vinegar
- 3 tablespoons soy sauce
- 3 tablespoons honey
- 1/2 teaspoon red chili pepper flakes
- 2 tablespoons sesame oil
- 4 garlic cloves, finely chopped
- 1 tablespoon plus one teaspoon finely chopped ginger
- steamed white rice, for serving
- thinly sliced scallion, for serving
- 1 tablespoon toasted sesame seeds, for serving
Method
- Set your oven to 425 degrees F. Arrange the frozen chicken tenders on a baking sheet with a rim and bake them. Cook until they are golden and very crispy, which should take roughly 10 minutes longer than the time suggested on the package. Lower the oven temperature to 200 degrees F to keep the chicken warm.
- While the chicken cooks, put about 1-inch of water into a medium saucepan that has a steamer basket. Bring the water to a boil over medium-high heat, then add the broccoli florets and season with salt. Cover the pot and steam the broccoli until it becomes tender, for approximately 8 minutes. Keep it warm.
- Put the cornstarch into a medium bowl. Whisk in the rice wine vinegar, soy sauce, honey, red chili pepper flakes, and 3 tablespoons of water until smooth. Set this sauce mixture aside. Heat the sesame oil in a small skillet. Once the oil is shimmering, add the chopped garlic and ginger and cook until softened, for about 2 minutes. Pour in the cornstarch mixture and cook, whisking continuously, until it comes to a boil and thickens, for 1-2 minutes. Take the skillet off the heat.
- Take the baked chicken tenders out of the oven and put them into a large bowl. Add the warm broccoli and the prepared sauce, then toss everything together to coat evenly. Serve the chicken and broccoli alongside steamed white rice, and finish with a topping of thinly sliced scallions and toasted sesame seeds.
