Flatbread Pizza with Prosciutto, Arugula and Mozzarella
This speedy pizza uses pre-made flatbread for a crisp base, topped with melted mozzarella, tomatoes and prosciutto. It is finished with a fresh salad of arugula dressed in lemon and olive oil. Ready in just 5 minutes, it makes a fantastic light meal, appetiser or snack for two people.
Ingredients
- 2 tablespoons vegetable oil
- 2 flatbread pita rounds, whole wheat or regular
- 1 cup grated mozzarella
- 1 cup arugula
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon fresh juice from 1 lemon
- Kosher salt and freshly ground black pepper
- 1/2 cup halved grape tomatoes
- 1/8 pound prosciutto
- Shaved Parmesan, to taste
Method
- Place 1 tablespoon of vegetable oil in a 12-inch skillet and heat it until hot. Cook the flatbread until it browns, which takes about 2 minutes. Turn it over and quickly add the cheese, tomatoes and 2 or 3 slices of prosciutto. Cover the pan to melt the cheese, which takes less than a minute.
- Combine the arugula with the extra-virgin olive oil, lemon juice, salt and pepper in a small bowl. Toss to dress it and then set it aside.
- Transfer the cooked pita to a serving plate. You can keep it warm in the oven while preparing the rest. Finish each pizza with the prepared arugula, some shaved Parmesan and a grind of pepper.
