This no-bake appetiser is ideal for warm weather, using a convenient Boboli pizza shell and pre-chopped salad bar vegetables for speed. A creamy blend of cream cheese, ranch mix, mayonnaise and sour cream forms the base, which is topped with colourful, crunchy veg and mild cheddar. It requires just 5 minutes of prep before chilling. For best texture, avoid tomatoes and mushrooms if you plan to have leftovers.

5 Minute Veggie Pizza Appetizer

Ingredients

  • 12 inches Boboli Thin Pizza Shell
  • 1 (8 ounce) package cream cheese (I prefer light)
  • 1 (1 ounce) packet of dry hidden valley ranch dressing mix
  • 2 tablespoons mayonnaise
  • 1/4 cup sour cream
  • 2 cups finely chopped vegetables (broccoli, cauliflower, green or red peppers, shredded red cabbage, carrots, cucumbers etc.)
  • 1 cup finely shredded mild cheddar cheese

Method

  1. Use a hand mixer to combine the cream cheese, ranch dressing mix, mayonnaise and sour cream until the mixture is smooth and creamy.
  2. Take the Boboli crust and spread the cream cheese mixture over it evenly, going right to the edges.
  3. Scatter the finely chopped vegetables over the pizza, then finish with a topping of the shredded mild cheddar cheese. Gently press the toppings down to help them adhere.
  4. Place the pizza in the refrigerator, covered, for a minimum of 1 hour to allow the flavours to develop.
  5. Slice the chilled pizza into thin wedges or bars and it is ready to serve.
