5 Minute Delicious Artichoke Dip

Ingredients

  • 1 small onion (about 1/2 c finely chopped)
  • 1 (13 3/4 ounce) can artichoke hearts, drained
  • 1 tablespoon lemon juice
  • 1 cup grated parmesan cheese
  • 1/4-1/2 teaspoon ground black pepper
  • 2/3 cup light mayonnaise
  • 1/3 cup heavy cream
  • 1 French baguette, thin sliced

Method

  1. Set your oven to heat to 400 degrees F.
  2. Place the onion into the food processor and chop it coarsely.
  3. Put the drained artichoke hearts into the processor. Pulse to chop them coarsely, being careful not to over-process.
  4. Add the lemon juice, grated parmesan cheese, light mayonnaise, heavy cream, and ground black pepper. Pulse the processor briefly just to combine the ingredients.
  5. Transfer the mixture into an ovenproof dish. You can cover and refrigerate this for up to a day before baking.
  6. Bake the dish uncovered at 400 degrees F for approximately 25 minutes, until the top is golden and the dip is bubbly.
  7. Present the warm dip accompanied by thin slices of French baguette.
