5 Minute Delicious Artichoke Dip
This creamy artichoke dip is a simple yet impressive appetiser. Adapted from a classic, it comes together in minutes using a food processor. The mixture of artichoke hearts, Parmesan, and a creamy base bakes until golden. It can be prepared a day in advance, making it a convenient choice for entertaining. Serve it warm with slices of crusty French bread for dipping. Expect it to serve 6 to 8 people.
Ingredients
- 1 small onion (about 1/2 c finely chopped)
- 1 (13 3/4 ounce) can artichoke hearts, drained
- 1 tablespoon lemon juice
- 1 cup grated parmesan cheese
- 1/4-1/2 teaspoon ground black pepper
- 2/3 cup light mayonnaise
- 1/3 cup heavy cream
- 1 French baguette, thin sliced
Method
- Set your oven to heat to 400 degrees F.
- Place the onion into the food processor and chop it coarsely.
- Put the drained artichoke hearts into the processor. Pulse to chop them coarsely, being careful not to over-process.
- Add the lemon juice, grated parmesan cheese, light mayonnaise, heavy cream, and ground black pepper. Pulse the processor briefly just to combine the ingredients.
- Transfer the mixture into an ovenproof dish. You can cover and refrigerate this for up to a day before baking.
- Bake the dish uncovered at 400 degrees F for approximately 25 minutes, until the top is golden and the dip is bubbly.
- Present the warm dip accompanied by thin slices of French baguette.
