Crock Pot Burritos
These Mexican-inspired burritos are prepared using a slow cooker for tender, shredded pork. The seasoned meat is cooked with salsa, then served in warm tortillas with cheese and fresh cilantro. It's a convenient one-dish meal that requires minimal hands-on time, perfect for a family dinner. The recipe yields 8 to 10 servings.
Ingredients
- 1 (3 lb) pork sirloin roast
- 2 teaspoons southwest seasoning
- 3 cups prepared chunky salsa, divided (use mild, medium or hot)
- 8 -10 flour tortillas or 8 -10 corn tortillas
- 1 cup grated cheddar cheese or 1 cup colby-monterey jack cheese
- 1 tablespoon fresh cilantro leaves (snipped or chopped)
Method
- Coat the pork sirloin roast on all sides with the southwest seasoning and transfer it to your slow cooker.
- Add 2 cups of the prepared chunky salsa over the pork, put the lid on, and cook on the low setting for 6 to 8 hours.
- Once the pork is cooked, use two forks to pull it apart into shreds.
- While the pork cooks, wrap your tortillas in aluminium foil and warm them in an oven preheated to 350 degrees for 20 minutes.
- Place a portion of the shredded pork mixture onto each warm tortilla, then add extra salsa, grated cheese, and chopped cilantro.
- Place the assembled tortillas under a grill for 1 minute to melt the cheese.
- Fold each tortilla around the filling to form a burrito.
- Enjoy your burritos with sides of black beans and Spanish rice.
