5 Minute Cookies
These speedy cookies require no baking. Simply combine rolled oats, flaked coconut and peanut butter. A boiled mixture of sugar, cocoa, butter and milk binds everything together before vanilla is stirred in. The dough is shaped, placed on waxed paper and left to cool until firm. It's an ideal treat when time is short.
Ingredients
- 2 cups rolled oats
- 1 cup flaked coconut
- 1 cup peanut butter
- 2 cups white sugar
- 0.25 cup unsweetened cocoa powder
- 0.25 cup butter
- 0.5 cup milk
- 1 teaspoon vanilla extract
Method
- Prepare your baking sheets by lining them with waxed paper. In a bowl, thoroughly combine the rolled oats, flaked coconut and peanut butter.
- Add the white sugar, unsweetened cocoa powder, butter and milk to a large saucepan. Bring this to a boil, stirring until smooth and the sugar dissolves, which takes about 1 minute. Take the pan off the heat. Stir the oat mixture into this liquid, then mix in the vanilla extract.
- Take roughly 1 tablespoon of the dough, form it into a ball and then flatten it. Position each cookie on the prepared waxed paper and let them cool completely.
