5 Layer Dip - Non Dairy
This popular five layer dip offers all the flavour of the classic party favourite but is completely dairy-free. It features layers of seasoned ground meat, refried beans, a creamy corn and green chilli mixture, fresh homemade guacamole, and diced tomatoes. Perfect for gatherings, it serves a crowd and can be prepared ahead of time. The recipe is simple to assemble and bakes briefly to meld the first layers together.
Ingredients
- 2 lbs ground beef or 2 lbs turkey
- 30 ounces refried beans
- 30 ounces corn
- 1 cup mayonnaise
- 7 ounces diced green chilies
- 2 large avocados
- 1/2 cup salsa, of your choice
- 14 1/2 ounces diced tomatoes, drained
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 small onion, diced
- 1 dash salt
- 1 dash pepper
Method
- Cook the ground meat with the garlic powder, cayenne pepper, salt and pepper until browned, then drain the fat. Transfer this mixture to form the base layer in a 13x9 inch baking dish. Spread the refried beans evenly over the meat. Bake this layer in an oven preheated to 350 for 10 minutes.
- While the first layer bakes, combine the corn, mayonnaise and diced green chillies in a mixing bowl. Once the meat and bean layer has baked, take it from the oven and spread the corn mixture over the top.
- Prepare the guacamole by mashing the avocados and stirring in the salsa. You may use a shop-bought version, but fresh is recommended. Spread this guacamole layer carefully over the corn mixture.
- Finish the dip by scattering the drained diced tomatoes evenly across the top. Place the assembled dip in the refrigerator to chill until you are ready to serve it.
- Note that this recipe yields a generous amount suitable for 12-15 people. For smaller groups, consider making half the recipe in a smaller dish. Leftovers are best enjoyed the following day, as the avocado may deteriorate after two days.
