5 Ingredient Vegan Mug Cake
This vegan mug cake delivers a wonderfully cakey texture and is incredibly simple to prepare. Using a base of chai tea and bittersweet chocolate, it comes together in a mug and cooks in the microwave. It's an ideal single-serving breakfast or dessert that can be ready in moments. Optional chocolate chips add an extra touch of indulgence.
Ingredients
- 3 1/2 tablespoons chai tea mix (or use black tea or non-dairy milk)
- 35 g bittersweet chocolate
- 3 1/2 tablespoons whole wheat flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/2 tablespoon chocolate chips, of choice (optional)
Method
- Place the chai tea mix and bittersweet chocolate into a mug. Microwave at 680 W for about 1:30 until melted, resembling hot chocolate.
- Use a fork to whisk the whole wheat flour, baking powder and baking soda into the mug. Stir in chocolate chips if using. The batter should be thick like muffin mix. Add more tea by the teaspoon if required.
- Cook the mixture in the microwave for one minute at 765 W. It is ready when the cake has risen and is firm.
- Allow the cake to cool slightly before eating. It pairs well with frozen soy yogurt.
