5 Ingredient Tomato Soup
This straightforward American soup requires only five key ingredients, featuring canned San Marzano tomatoes, butter and onion. Inspired by a classic tomato sauce method, it simmers for 45 minutes to develop a rich, comforting flavour. The finished soup is blended until smooth and can be served with your favourite accompaniments. It yields 4 to 5 servings.
Ingredients
- two 28-ounce cans San Marzano tomatoes (whole or crushed will work – I usually use whole tomatoes, and we use the DeLallo brand!)
- 1 stick (8 tablespoons) salted butter
- 1 yellow onion, peel removed and cut into 4 chunks
- 3-4 cloves smashed garlic (optional)
- 1 1/2 teaspoons salt
Method
- Place the tomatoes, butter and onion chunks into a large saucepan or Dutch oven. Heat the mixture until it reaches a gentle bubble, then reduce the heat. Partially cover the pan with a lid and allow it to simmer for 45 minutes, stirring approximately every 15 minutes to avoid the base catching.
- Use tongs to take out the pieces of onion. You may choose to keep the optional garlic in the soup or remove it at this stage.
- Blend the soup directly in the pot with an immersion blender until your desired consistency is achieved. Check the seasoning and add more salt if needed. For a thinner soup, you can stir in milk, water, broth or cream.
- Ladle the hot tomato soup into bowls. Enjoy it with sides such as garlic bread, a grilled cheese sandwich, croutons, crackers or a swirl of pesto.
