Toblerone Shortbread Cookies

Ingredients

  • 1 cup butter, softened (do not use margarine)
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 2 -3 Toblerone chocolate bars

Method

  1. In a medium bowl, cream the butter with the sugar until the mixture is pale and fluffy.
  2. Gradually beat in the all-purpose flour and cornstarch, continuing to mix until well combined and light.
  3. Take a teaspoon of the shortbread mixture and press it gently between your palms to flatten it slightly.
  4. Position one Toblerone triangle in the middle of the flattened dough. Cover it with another slightly flattened teaspoon of mixture, then press the edges together to seal the cookie.
